I just made a chuck roast (pot roast) in my dutch oven. I do it a little different.

Preheat the oven to 300 degrees.

Season the meat with kosher salt and black pepper both sides.

Olive oil in the dutch oven, mine is cast iron, place the meat in and sear until golden brown. About 5 min a side.

Take the meat out set aside. Don't wipe out the pot. Add large onion sliced and sauté on medium heat. Add minced garlic.

When the onion is soft Add 1 cup red wine (use beef broth if you don't want the wine)and deglaze the pan for a min. Then add 2 cups beef broth, Worcester sauce, tomato paste(6oz can), fresh thyme, rosemary and bay leaves. Stir to combine.

Add the meat back in and cook covered for 1.5 hrs.

Remove from the oven and add baby carrots and baby yellow potatoes. Salt and pepper. Cover and cook for 2 hrs more
